Oven: Lay the vegetables in a baking tray, drizzle some olive oil, add salt and pepper and gently mix. Place it in a pre-heated oven at 220C for 25-30 minutes.
Stove: Place olive oil in a pan and roast the vegetables on low flame till crisp.
Horizontally slice the focaccia loaf from the center. Spread basil pesto on the bottom half. Top it with the roasted vegetables and crumble some feta cheese on it. Spread cream cheese on the other half of the loaf and place it on top to make a giant sandwich.
Divide the sandwich into 6 equal pieces and enjoy!
